The meal and 2 derived soups. A stew can be a soup, several times over.

a. stuffed bell peppers, okra in tomato sauce

A classic recipe. You can buy them frozen, but they're not nearly as good as the ones you make from scratch.

INGREDIENTS

This is what you need for 4 servings:

  • 1 lb. ground meat, 50-50 beef + pork
  • 4 large bell peppers
  • 1 cup rice
  • 4 cups tomato sauce
  • S&P, seasoning

b. stuffed bell pepper soup

I made 7 stuffed bell peppers. There were only 2 for dinner.
The rest can be reheated for another meal, or they can be used to make soup.

INGREDIENTS

This is what you need for each serving:

  • 1 large stuffed bell pepper, fully cooked
  • 1 small potatoes, fully cooked
  • 2 cups water / stock
  • S&P, seasoning

c. sweet mini pepper soup with stuffed bell peppers, sliced potatoes

This is a very different soup. The main ingredient are the mini peppers.
The stuffed bell pepper was a bit of an afterthought.

INGREDIENTS

This is what you need for 4 servings:

  • 2 lbs. sweet mini peppers
  • 2 stuffed bell peppers
  • 1 cup dehydrated sliced potatoes
  • S&P, seasoning

optional:

  • chipotle hot sauce
