cold roastbeef with beans, sweet potatoes

This roast beef was cooked stovetop the previous day, refrigerated overnight and served cold.
I often use these small roasts for sandwich meat, but this is nice too. 

INGREDIENTS

This is what you need for 2 servings:

  • 1-2 lb. beef roast (+ extra servings)
  • 1 large yellow onions
  • 1-2 lbs. green beans
  • cooking oil
  • S&P
  • 1 lb. yams
  • vinegar
