This is what you need for 2-3 servings:
- 2-3 lbs. oxtail
- CA mix vegetables
- rice
- S&P

Never a quick meal, oxtail. I started this before 8 AM, let it simmer until noon time. At least, it doesn't require much attention, only the occasional check to make there's enough water in the pot.
The meat fell off the bones, and the fat peeled away without difficulty. I wish it were always that easy.
