Carne asada = small-cut stir-fried beefsteak.
Chopped thin-cut steak is stir-fried on a very hot surface. It is a very popular item with Mexican street vendors who incorporate this into tacos a.o. small dishes.
This is very different from carne picada or carne con papas where the meat is moist-cooked in a sauce.

For true carne asada, stir-fry the meat, optionally with onions, chile, over high heat until nicely browned.
Sauces can be added after cooking, to avoid stewing the meat. The potatoes in tomato sauce (papas con tomates) is stewed on the side.
Carne con papas is the same combination: beefsteak, potatoes & tomatoes, but by stewing the meat in the sauce, texture and flavor will be different.
