This Mexican soup (crema de calabacitas) is made with grey aka Mexican zucchinis. It is quick and easy to make and is delicious. Go easy on the condiments: grey zucchini flavor is fairly delicate and can easily be overpowered. Unless you like to drink pumpkin pie, avoid pumpkin spices with all squash soups.
You can use yellow zucchinis for a yellow soup with a more buttery and slightly sweeter flavor.
