zucchini soup with onions, potatoes

This soup is the reverse of onion soup with zucchinis. Adding the onion and a few potatoes gives the soup more body than zucchinis all by themselves.
I had some leftover butter-poached lobster tail in the fridge and added it to my 2nd helping. That was a really nice combination. Same soup, 1 extra ingredient, very different flavor.

- Peel, slice and dice 1 onion, (Pic2) and 2 medium potatoes. (Pic3)
- Stir-fry in olive oil until the onions start browning. (Pic4)

zucchini soup
- Add 2-3 lbs. zucchinis, and water / stock to cover it all. Bring to a boil. (Pic5)
- Reduce heat, cover and simmer 15-20 minutes over low heat. (Pic6)
- Serve and enjoy. (Pic1+7)

- I also got rid of about 3 lbs. potatoes that were getting soft.
I boiled and mashed them, mixed part of them with these soup veggies = zucchini stoemp.
