tomato soup with mixed vegetables

This is a simple recipe that is chockfull of flavor. I ate some of the soup and used the remainder of the vegetables as a side dish.

INGREDIENTS

This is what you need for # servings:

  • 8 plum tomatoes, cored, peeled
  • 3 potatoes
  • 6 carrots
  • 3 branches celery
  • ½ quartered small cabbage (2 quarters)
  • 2 large Mexican zucchinis
  • S&P
