INGREDIENTS
This is what you need for 8+ servings:
- small pork roast, 2-4 lbs.
- vegetables of your choice
broccoli, cauliflower, carrots, potatoes - S&P, spices of your choice
This is a double recipe. Similar veggies, different meats.
Making vegetable soup in a crockpot means the veggies will be severely overcooked for some people's taste. I don't mind it occasionally. The vegetables may not have much flavor left, but the broth tastes great.
Reminder: Never start a crockpot with frozen vegetables.
Crockpot is easy. Fill it up, go and forget about it until dinner time.
