This is what you need for 3 quarts = 6+ servings:
- 3 medium to large onions
- 3 qts. water + bouillon / beef stock
- S&P, seasoning
- dried seaweed

I tried a new onion soup variation today, and it is simply amazing. Seaweed adds a very distinctive seafood flavor, making me wonder if I should add some shrimp too. Be prepared to be overwhelmed by good flavors.

Instead of putting those on top of the soup and melting the cheese under the broiler, I served this one upside down, to let the hot soup melt the cheese. No need for a nice presentation when I make it for myself.

This is one onion soup variation where I found that cheese and toast diminish the soup by masking the seaweed flavor. Seaweed has a very distinctive flavor, and I thought it was very nice already before toast and cheese were added. It wasn't bad with, but was imo better without.
