This is what you need for 4 servings:
- 4 large yellow or sweet onions
- butter / olive oil
- up to 8 cups beef / chicken stock
or water + bouillon concentrate - parsley (dried or fresh)
- S&P

Another minor variation on French Onion soup.
I added dry parsley and served the soup upside down, with bread and cheese on the bottom of the bowl to let the heat of the soup melt the cheese instead of melting au gratin.
There is no doubt that this is onion soup, but the parsley adds a nice touch, especially if fresh.
