Another experiment. It was good.

A. stuffed cucumber soup

This is the standard stuffed cucumber recipe with a few additional ingredients. Lettuce 'darkens' the flavor of the soup, bell peppers add bulk to the meat mix and a nice flavor contrast in the meatballs & meatloaf.

INGREDIENTS

This is what you need for 6 quarts = 12+ servings servings:

base soup:

  • 1 head celery
  • 2 large potatoes
  • 1/2 yellow onion, chopped coarsely
  • 1/2 head iceberg lettuce, shredded
  • 4 large cucumbers (in thirds)
  • 2 green bell peppers
  • S&P

meat mix:

  • 1 lb. ground beef & pork each
  • seasoning of choice (here: taco spice mix)
  • 2 green bell peppers
  • 1-2 eggs
  • breadcrumbs
  • S&P
  • taco mix seasoning

Optional:

  • 1-2 serrano / jalapeno peppers

B. small meatloaf

I often prepare a small meatloaf for sandwich meat with the remaining meat mix.
Great for breakfast or a snack.

  • 6-8 cups meat mix as above
