beef shank, leeks, potatoes a.o. veggies

You already know leek & potato soup.
This recipe adds beef shank, which shifts the flavor all the way to meaty.

About halfway, I added mixed vegetables for the noon-time meal. Those were mostly gone afterwards, but the meat still needed to simmer several hours before being edible.

One package of beef shank is enough for a 6-qt. pot. I added leek greens and potatoes.

This simmered from 10 AM through 4 PM for an afternoon bowl of soup. Because the meat was fairly thin, it started falling apart by then. I did serve the vegetables earlier, at noon with today's meal = Spanish-fried battered flounder.

INGREDIENTS

This is what you need for 4 quarts = 8+ servings:

  • 1 pckg. beef shank
  • leek greens from 1 leek
  • 3-4 medium potatoes, peeled, diced
  • S&P, seasoning

optional:

  • Knorr vegetable mix + leek mix

To be honest, it never became a meal, at least not for us. I often prefer the soup and leave the meat for what it is. Mind me, it wasn't bad at all. I just didn't feel like eating it that late in the day. Our dog was very grateful.

Most of the vegetables were gone already, served with the  battered flounder meal. Only some potatoes were left.
